Custard Scones

8 cups self-raising flour
1 cup sugar
2 teaspoons cornstarch
3 cups sour milk
1/2 cup custard powder
4 medium eggs
2 teaspoons lemon essence
1 teaspoon bicarbonate of soda
300g Rama margarine


1. Mix all ingredients in a mixing bowl, and rub in the margarine until the mixture resembles bread crumbs
2. In a separate bowl, whisk sour milk, eggs and lemon essence until well combined
3. Pour the wet mixture into the dry one and mix well. (Be careful not to over mix though)
4. On a lightly floured surface, roll the dough out and shape as desired
5. Grease and lightly flour the baking tray. Place the shaped dough in and brush with a beaten egg
6. Bake in a preheated oven @ 180 degrees Celsius until golden brown
