How to make Doughnut

* 20g fresh yeast
* 125ml luke warm milk
* 25g butter melted
* 2 egg yolks
* 250g flour + extra for dusting
* oil for greasing and deep frying
* castor sugar for dusting

1 – Mix yeast with a little milk, add the remaining milk, butter and the yolks,Sift flour into a bowl and make a well in the center, pour in the yeast mixture and draw in the flour

2 – Beat the dough vigorously with your hand, knead well, cover with oiled cling wrap and leave to rise for 1hour

3 – Tip out onto a lightly floured board and knead, roll out to 2cm thickness and stamp into rounds, leave to rise on an oiled tray, covered with cling film for abt 10mins

4 – Deep fry a few at a time about 1minute on each side or until evenly brown, drain onto a paper towel and leave to cool, roll in caster sugar

5 – Warm up about 6Tblsp of apricot jam and use a piping syringe to inject the jam into center of warm coated doughnuts (that’s your jam doughnuts)
#Ring doughnuts you will have to use 2size cutters one big and a smaller one to make a hole in the center
