How to prepare Coconut Cookies

250g butter
1 cup icing sugar
2 eggs
1 tsp vanilla essence
2 cups dessicated coconut
3 cups flour

Preheat oven at 180°C.
Cream butter and sugar.
Add the eggs, one at a time and continue whisking.
Add the vanilla essence and the coconut.
Fold in the flour.
Using your hands, roll the dough into sizeable balls.
Arrange in your greased baking tray.
Flatten with a fork.
Bake for about 15 minutes or until your cookies are golden brown.
